Slow cooker chicken, bacon and veg stew

Being a working father and doing my share of night feeds, this slow cook stew is a godsend! I prepare this after work for the next day, and cook it during the night (quite safe to do so based on the fact we get up every 2 hours to feed our baby daughter). This stew is not one of those namby pamby posh nosh meals, it is a simple stew. Tastes lush, and requires minimal effort! So if you are having to juggle work, sleep, baby feeds, cooking...ok life in general...give this one a whirl. Oh the quantities I used just about fit into a 3.5 litre slow cooker, so you can cut down on quantities if you don't want stew all over your kitchen.

Ingredients
Serves: 8

3 large parsnips, peeled and chopped
4 large carrots, peeled and chopped
1 swede, peeled and chopped
1 handful shallots, peeled and left whole
3 medium cloves garlic, chopped
4 leeks, cut into chunks

1 packet bacon, chopped
3 chicken breast fillets, cut into chunks
1 handful mushrooms
1 large white onion, chopped
1 Knorr® chicken stock pot
750ml to 1L boiling water

Method
Prep:20 min › Cook:8 hr › Ready in:8 hr 20 min

Preheat the slow cooker to Low. Place the parsnips, carrots and swede into the slow cooker along with the shallots, garlic and leeks.
Fry the bacon in a frying pan over a medium heat until browned then add the chicken breast and mushrooms and cook and stir for a few minutes until browned. Transfer to the slow cooker.
Pop all of the remaining ingredients into the slow cooker and cook for 8 hours. I like to give it a stir half way through to make sure its all mixed in.
If you have a keep warm setting, this is awesome, stew ready when required! Anyway...I'm off to feed the little one...
